Overnight Raw Oats (Creamy Blueberries and Peanut Butter)

Soooo, overnight oatmeal is one of the easiest, quickest breakfasts to create. It's pretty much just.... Throw anything and everything into a jar that sounds yummy, shake it, and let it sit until the morning. The raw oats will soak up liquid and get soft and plump by morning time. The entire jar thickens really. If you're in a rush, your breakfast is already waiting for you, or you can ever take it with you out the door! I want to share my favorite recipe I've ever made because it was super thick and perfect for my liking. You can change the amount of milk added if you want it more liquid-y, but seriously this recipe is perfect. I've made it more liquid-y before but this will always be my favorite.photo (27)Overnight Raw Oats (Creamy Blueberries and Peanut Butter)Serves: 1

  • 1/3 cup old-fashioned oats
  • 2 TBSP peanut flour
  • 1 TBSP chia seeds
  • 1/2 TBSP hemp seeds (Optional)
  • 1/3 cup plain greek yogurt
  • 1 TBSP ground flax seeds (Optional)
  • 1/2 tsp psyllium husk (Optional)
  • 1/4 cup blueberries
  • 1 stevia packet
  • 1 cup of unsweetened almond milk

Combine every ingredient in a jar. Cover with the lid. Shake (or stir with a spoon). Let it sit in the fridge overnight. BAM, DONE. How easy is that?? You can reheat it a little in the morning if you want, but I personally think it's best eaten cold.In the morning, I topped mine with a tablespoon of coconut peanut butter. This part is pretty important in my opinion :p It just makes it all the more creaaamyyy. You could add whatever nut butter you want, or chopped nuts, more blueberries, some other fruit, etc. Gahhh my mouth is watering just thinking about it!
