Orange Shrimp Stir-Fry

I've been loving adding fruit to my stir fries. It seemed bizarre to me at first but it adds a nice sweet kick to the flavor! Orange is my favorite to use :) Try iiitt.photo (41)Orange Shrimp Stir-FryServes: 2

  • 7-8 oz frozen, pre-cooked shrimp
  • 1 orange
  • 1/2 large zucchini
  • 1/2 green bell pepper
  • 1/2 white onion
  • 1 cup frozen sliced okra
  • 1 TBSP minced garlic cloves
  • 1 TBSP sesame seeds
  • 3/4 tsp ginger
  • 3 TBSP low sodium soy sauce
  • 1/2 cup no salt added chicken broth

Peanut Sauce

  • 3 TBSP peanut flour
  • 3-5 TBSP unsweetened almond milk

  Start by unthawing your pre-cooked frozen shrimp. For this you just need to run it under cold water for 5-6 minutes. I like to just set my shrimp in a strainer with the sink water running while I prep the rest of dinner. While that's going, peel your orange and cut each individual slice into 3-4 smaller cubes. Chop your zucchini, green bell pepper, and onions and mince the garlic. In a large frying pan, add all of your ingredients except for the shrimp and the peanut sauce ingredients. Let it all cook on a medium heat until the liquid is cooked off. Then toss in the unthawed shrimp and cook for 4-5 more minutes in order to heat up the shrimp. Done! Top with more sesame seeds and the peanut sauce. For the sauce, I start with a 1:1 ratio of peanut flour to almond milk and just add more milk slowwllyyy until it's how runny I want it.EAT UP!
